a few cups of tea, a spare afternoon and some spanners - much easier than a type 1 :-)
some really good videos on YouTube -

What replacement shocks would you recommend

Unless you are planning to lower 3 or 4 splines at the front I would use stock oil shocks.
3 or 4 down you will need to use a shorter shock - available form machine 7 or heritage - still go with an oil shock unless you are setting the car up for fast road use.

How low were you planning? - standard wheels and tyres?

Not 100% sure on wheels and tyres yet, might even keep the standard wheels and have them painted. Can you lower the front using what is there already and if so how much drop will I get?

Yes - leave the wheels stock - 1 spline will level the car out nicely - they are typically a little higher at front standard.
2 splines will lower compared to the rear but you may get some tyre rub if you keep with stock 165 tyres.
I would go 1 spline first and go from there...google will likely give you pictures of 1,2 and 3 spline lowering.
